Canning Dehydrating Recipes from the Pantry

Fruit Juice Concentrate

For use in other recipes

Ingredients

1 quart fruit juice
My favorite for cooking with is peach, but apple and white grape are very good, too.
Stainless steel pot
1 pint mason jar

Instructions

Pour the juice into the pan.  Turn heat on medium and bring up to a low simmer.  Simmer until the juice is reduced by half - approximately 1 hour - but can be longer.  Scrape bottom carefully once in a while with a stainless spoon or wooden spatula - the fruit sugars will want to stick - when you stir, they may 'spit' up - be careful.

Pour into pint jar and let cool.  Cover and refrigerate.  Will keep in the refrigerator about 2 weeks - if it lasts that long.
