Dehydrating



The older I get and the longer I preserve food by canning and dehydrating, the more I LOVE dehydrating.  Canning has it's place and I prefer to can meats, but dehydrating has so much to offer that it may become your favorite method as well.  Fruits and many vegetables simply require washing, cutting as necessary and putting in the dehydrator, while a few vegetables may require quick blanching. 

Perhaps my favorite reason for dehydrating is the incredible convenience.  I enjoy the ability to add just a few black olives or a spoonful of celery to a recipe without dealing with washing/pealing or what to do with the 'extra' that is more than I need at the time.
